This BARBACOA recipe is the perfect meal for busy mornings. It's easy to prepare and requires minimal effort, making it perfect for those on-the-go. I have updated the recipe to include a searing step, which adds more color and flavor to the dish, but it's not necessary if you're short on time.

To make the recipe, start with a high-quality cut of boneless chuck roast. A good cut will have a decent amount of fat that will melt in the slow cooker, providing ample flavor without being too greasy. For the best results, use a fresh chuck roast that has not been frozen. Cover and cook on low for 8-9 hours, or until the meat is tender.

Once the meat is cooked, it's time to shred and serve. Don't discard the flavorful cooking liquid. Keep the juices in the slow cooker and let them mix with the shredded meat to enhance the flavor.


  • 1 tablespoon vegetable oil
  • 3 1/2 pounds of good quality boneless chuck roast
  • 1/2 cup low sodium beef broth
  • 1 tablespoon of kosher salt
  • 1 tablespoon of chili powder
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • 1 tsp freshly ground black pepper
  • 1 lime
  • 1 tablespoon freshly minced cilantro


  1. Season roast lightly with salt and pepper. 
  2. In a large skillet, heat tablespoon of vegetable oil to high, sear roast on both sides.
  3. Place boneless chuck roast in slow cooker and use seasoning to season on all sides. Add beef broth to slow cooker. 
  4. Cover and cook on low in slow cooker for 8-9 hours, or until meat is fork tender.
  5. Once meat is tender, shred in slow cooker and serve with a squeeze of fresh lime juice and a sprinkle of cilantro.
