Slow Cooker BBQ Bacon Cheeseburger Dip

Slow Cooker BBQ Bacon Cheeseburger Dip

8 slices bacon chopped (plus extra for garnish, if you like)

1 pound ground beef

8 ounces cream cheese

1 ½ cups shredded mozzarella cheese

1 cup shredded cheddar cheese

1 (14.5-oz) can diced tomatoes

1 cup BBQ sauce see notes for low carb/keto

1 teaspoon Italian seasoning

  1. Brown Bacon and Beef: Brown the bacon in a large skillet. Remove and set aside. Add the ground beef to the skillet and cook until browned (if you don't want to set aside any extra bacon for garnishing the dip later, you can brown both at the same time. If you DO cook extra bacon for garnish, refrigerate it for later.)
  2. Finish prep: Stir in all other ingredients into the skillet until well combined.
  3. Slow Cook: Transfer the mixture to a 3 ½ – 4 quart slow cooker and cook on low for 2-3 hours or until hot and bubbly. Stir well before serving with chips, crackers or vegetable sticks.
