CROCKPOT TACO SOUP


Ingredients

2 lbs lean ground beef (95%-97% Lean)

4 ounces reduced-fat cream cheese

1 cup low fat plain greek yogurt

2 10-ounce cans of Rotel

1 Tablespoon of taco seasoning

1-2 tablespoons of Cilantro - fresh or dried

½ cup shredded low-fat cheese for garnish


Instructions

  1. Brown Ground Beef in a skillet over medium heat
  2. While meat is browning, place cream cheese, Rotel, greek yogurt, and taco seasoning into the crockpot.
  3. Drain grease off of meat and put meat in the crockpot
  4. Stir to combine with cheese and Rotel.
  5. Pour chicken broth over meat and cheese
  6. Cover and cook on low for 4 hours N
  7. Need it quicker? Cook on high for 2 hours
  8. Top with lettuce and cheese and remaining
  9. Before serving, stir in cilantro
  10. Ladle into bowls (6 servings) and garnish with shredded cheese and greek yogurt
